Tasting
Expressive nose of spring flowers: acacia, hawthorn. The mouth is dense, concentrated. A charming and fruity wine.
Serving
10-12°C.
Food pairings
Serve chilled as an aperitif, with sushi, sashimi, seafood tempura, steamed fish, Korean seafood pancakes, dim sum, shrimp dumplings, stir-fried vegetables and mildly spicy dishes.
The vintage
The 2025 vintage was marked by an early growing season, with ripening accelerating from late July and harvest starting around two weeks earlier than in 2024. The wines are concentrated yet balanced, with good freshness, expressive aromas and promising flavour profiles.
Terroir
Limestone soil with clay subsoil.
Winemaking
Grapes are refreshed after de-stemming and crushing. Short skin contact maceration. Fermentation process takes place at a low temperature. Bottling in spring season to keep the fresh aromas.
